Fruit-Filled Kolacky
- 1 cup butter
- 1 8-ounce package cream cheese
- 2 tablespoons sugar
- 1 tablespoon milk
- 1 egg yolk, well beaten
- 1 1/2 cups all-purpose flour
- 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- Assorted fruit fillings – apricot, plumb butter, prune butter, mixed nut crunch
Cream butter, cream cheese, sugar and milk until light and fluffy. Min in egg yolk. Combine flour, baking powder and salt. Stir into creamed mixture. Mix well.
Refrigerate dough several hours or overnight. Preheat oven to 400 degrees. Roll out dough on lightly floured surface to 1/8 inch thickness. Cut into 2 inch squares using a pastry wheel or sharp knife. Place 1/2 teaspoon of fruit filling in center of each square. Moisten opposite corners with water, bring those 2 corners together and pinch lightly to seal.
Place 1 inch apart on a greased cookie sheet. Bake until golden brown, about 8 minutes, cool completely on wire rack. Sprinkle with powdered sugar before serving.
